Spring Butter Lettuce Soup

This is a pick-me-up for the afternoon, or when your tummy is not at its' best. Also good as part of a Spring Cleanse routine. Highly nutritious, it imparts minerals in an easily absorbable form. It also helps you relax in the evening, unwind, and fall asleep better when you need to. All this in one little recipe. Amazing!

Cooking Time

Yields

2 servings or so

Ingredients

4 green onions

1 head Butter lettuce

1/2 c. parsley

2 c. vegetable broth, hot

Salt and pepper as needed

Directions

In a high-powered blender, blend all ingredients for 3 minutes on high. Garnish with a dollop of yogurt.
