2 cloves garlic, minced
1 onion, minced
1 T. lemon juice
3 peeled, seeded, chopped medium cucumbers, 1/4 cup diced for garnish
1 1/2 cups broth - preferably chicken
salt and pepper to taste
pinch cayenne (optional)
1/4 cup parsley, chopped, for garnish
Water saute onion and garlic in a large saucepan. Add lemon juice and cook for a minute. Add cucumber, broth, and spices; simmer 6 to 8 minutes until soft.
Add vegetables to blender along with avocado and some parsley. Blend until smooth.
Pour into a bowl, garnish with remaining diced cucumber and chopped parsley.
