It might work better in your blender if you double this recipe, to create the volume needed to homogenize the ingredients. Leftovers are great to have on hand in the refrigerator for after school snacks.
1 ripe avocado
1/2 cup or so water
4 T. cocoa powder or cacao
6-10 dated, pitted
1 tsp. vanilla extract
2 t. almond butter (optional - adds texture and richness)
In a high-speed blender, add all ingredients. Blend until smooth.
This easy recipe can be enhanced with other flavors - use espresso powder for a mocha flavor, cinnamon to make Mexican chocolate pudding, or almond extract and coconut milk in place of the water for Macaroon flavored dessert.
